Orange and Fennel Salad
in Sicilian:
‘nsalata d’aranci e di finocchiu
Orange and fennel salad is the perfect dish for the winter season. It is quick and easy to prepare, light and refreshing in taste, and a truly excellent source of vitamin C.
In winter, both oranges and fennel are in season, which alone makes this the ideal time to prepare this dish. The intense flavor of these two main ingredients is truly unmatched at this time of year. The combination of juicy oranges—especially those Sicily is known for—and the distinctive taste of fennel is both unique and exceptional. For this recipe, it is highly recommended to use Sicilian oranges, ideally varieties such as Moro, Tarocco, or Sanguinella, which grow at the foot of Mount Etna in particularly fertile volcanic soil.
The high vitamin C content in fennel is another reason to enjoy this salad when the ingredients are in season. Fennel is also a source of vitamins A, K, and E, and contains minerals such as magnesium, potassium, and calcium, as well as a relatively high amount of iron. Oranges also impress with their nutrients, including B vitamins such as folic acid. They likewise provide minerals like magnesium, potassium, and calcium, contributing together with fennel to a healthy and balanced diet.
There are many variations of this salad in Sicily. Depending on the family and the region, ingredients such as black olives, mint, or anchovies are often added. There are also standalone versions—such as orange salad or fennel salad—which make delicious side dishes well worth trying.
Orange and fennel salad can be served as either a starter or a side dish to meat or fish. Thanks to its ingredients and refreshing character, it is a light yet flavorful accompaniment that still stands on its own. It is important to assemble the salad just before serving, as the salt can otherwise affect the taste if it sits for too long. We hope this recipe inspires you to enjoy a healthy and delicious salad even in winter, and we wish you lots of fun preparing it.

Start by slicing the fennel into small pieces. Remove the tough core and the stalks from the fennel bulb, then cut it into bite-sized pieces and place them in a salad bowl. If you like, you can also add the fennel fronds and the finely chopped stalks.

Next, peel the oranges and cut them into small pieces. Do the same with the red onion, then add both ingredients to the fennel in the salad bowl. If desired, add a small amount of chili for a bit of extra heat.

Finally, season the orange and fennel salad with a pinch of salt and some olive oil. If you’ve already added chili, it’s best to skip the pepper. Otherwise, you can add a small pinch of pepper along with the salt and olive oil. Mix the salad well and serve immediately.
