In Sicily, there are countless variations of this popular summer dish. Every family has its own recipe, combining ingredients according to personal taste and what’s in season or available. Especially popular are the so-called “condiriso” mixes—pre-prepared vegetable blends specifically designed for rice salads and widely used across Italy. They typically include carrots, cucumbers, bell peppers, celery, beets, artichoke hearts, green and black olives, peas, and mushrooms. This mix gives Sicilian Rice Salad its characteristic variety of flavors and creates a pleasant balance between freshness and seasoning. The ideal rice for Sicilian Rice Salad is parboiled rice, as it stays firm, doesn’t stick together easily, and holds its texture very well.
In our version, we enrich the vegetables with tuna and corn, making the salad even more satisfying and full of flavor. If you prefer not to use a ready-made condiriso mix, you can also buy the individual ingredients separately, already preserved in oil, or prepare them from scratch. Many Sicilians traditionally preserve fresh vegetables in olive oil, sometimes with a splash of vinegar, before adding them to the rice. This creates a truly personal Sicilian Rice Salad, tailored to individual tastes and family traditions. For a creamier texture, a little mayonnaise can also be stirred in just before serving. This is a popular variation in Sicily as well, but by no means essential—without mayonnaise, the salad still delivers a fresh, well-balanced flavor.

Ingredients
- 200 g rice
- 280 g condiriso (or pickled vegetables)
- 70 g tuna (in olive oil)
- corn to taste
- mayonnaise to taste
Instructions
First, cook the rice for our Sicilian Rice Salad according to the package instructions. Once cooked, drain it well and let it cool slightly for a few minutes.

While the rice is cooking, drain the condiriso vegetables in a sieve so any excess liquid can drip off. Also prepare the tuna and corn.
Our condiriso includes carrots, bell peppers, artichokes, green and black olives, peas, celery, and mushrooms.
Tip: If you don’t have a ready-made condiriso mix, you can easily use jarred pickled vegetables instead. Alternatively, you can chop fresh vegetables yourself and let them marinate for a few hours in a mixture of olive oil and a little white wine vinegar. There are no limits to creativity here—the choice and combination of ingredients are entirely up to you.

Finally, add all the remaining ingredients to the rice and mix everything thoroughly. If the Sicilian Rice Salad is not served immediately, it can be stored in the refrigerator until needed. For a creamier version, you can stir in a little mayonnaise just before serving.
