For this recipe, however, we use the classic variety and enhance it with additional fennel seeds, which are baked together with the Oven-Baked Sicilian Sausage and potatoes.

Begin by washing the potatoes and boiling them in plenty of salted water for about 20–25 minutes. Once cooked, drain them and rinse briefly under cold water. When the potatoes are cool enough to handle, peel them and cut them into thick slices.

Next, drizzle a little olive oil into a baking dish, preferably a metal one. Preheat the oven to 180°C (350°F) conventional heat.
Place the Oven-Baked Sicilian Sausage and the sliced potatoes in the baking dish, turning the sausages in the olive oil to coat them evenly. Season everything with salt, pepper, and fennel seeds to taste. Finally, drizzle a little more olive oil over the ingredients and place the dish in the preheated oven.

After 15 minutes, open the oven and turn both the sausages and the potatoes. Repeat this step after another 15 minutes. At this point, pierce the sausages with a fork or the tip of a sharp knife. Do this carefully, as you may puncture a pocket of fat that can release hot juices.
Return the dish to the oven for a final 15 minutes. Once cooked, remove the Oven-Baked Sicilian Sausage from the oven and serve immediately. Buon appetito!
