Marinated Artichokes are a light and healthy side dish that is both appetizing and exceptionally easy to prepare. They make a delicious accompaniment to meat or fish dishes and can also be enjoyed as a satisfying meal on their own for vegetarians. Preparation is straightforward: to enjoy the tender artichoke hearts, the outer leaves must first be removed. After a brief cooking time, the artichokes can be marinated and served.

The artichoke originally comes from the Mediterranean region. In the mid-15th century, it was imported from Sicily by the Florentine merchant Filippo Strozzi. Its rise in popularity across France and Great Britain began in 1533 through Catherine de’ Medici, who helped introduce the vegetable to the royal courts of Europe.
Artichokes contain cynarin, a naturally occurring bitter compound. Cynarine supports the body’s digestion of fats and is traditionally valued for its beneficial effects on digestive function. This bitter substance also stimulates liver metabolism and contributes to the artichoke’s reputation as a health-promoting vegetable.

  • 4 large artichokes
  • 1 tsp oregano
  • 2 tbsp red wine vinegar
  • Parsley to taste
  • Olive oil
  • Salt

Start by removing the outer leaves of the artichokes as well as the stem. Then cut off the top part of the artichokes so that only the heart remains. Cut the heart in half or, depending on its size, into quarters.

Next, bring plenty of water to a boil in a large pot and cook the artichoke hearts until tender. The easiest way to check for doneness is with a fork: if the artichokes can be pierced easily, they are ready. Remove them from the water, preferably using a slotted spoon.

The cooking time is approximately 15 minutes, depending on the size of the artichoke hearts.

Afterwards, cut the artichoke hearts into smaller pieces and place them in a bowl. Finally, season them with olive oil, red wine vinegar, oregano, and some finely chopped parsley. If desired, you can also add a little salt, although this is not necessary.

Arrange the Marinated Artichokes on serving plates and serve them, for example, alongside grilled meat. Buon appetito!
