Pasta with breadcrumbs and anchovies
in Sicilian:
Pasta ca’ muddica e anciovi
Pasta with breadcrumbs and anchovies is one of the simplest and most satisfying pasta dishes of Sicilian cuisine. With just a few ingredients, you can conjure up a sensational lunch in no time.
In the past, very little was needed to be happy at the table. In the absence of other ingredients, Sicilian women improvised with what little they had, always developing refined dishes. In this way, delicious and tasty meals were created, which we still enjoy today. Pasta with breadcrumbs and anchovies is evidence of these dishes just described. The dish is quick to prepare, unlike the lavish Sicilian meals, such as the so-called timballi or a classic parmigiana. For this reason, this recipe is suitable for those who do not have the opportunity to spend a long time at the stove, or for those who have guests visiting at short notice.
Despite or perhaps because of the simple ingredients such as breadcrumbs, anchovies, olive oil and garlic, which in their interaction create an extraordinary taste, the “Pasta ca muddica” is a small masterpiece of essentiality. Most of these ingredients are usually always at home, so the dish can be prepared and served without much preparation. With just a few simple steps and without much effort, you can create a meal that is a welcome change from the usual and familiar pasta dishes. Contrary to what one might expect, the breadcrumbs do not make this dish dry. Rather, it is the perfect balance to the slightly salty and oily anchovies.
