Description
A Ricchigia’s pistachio pesto is made according to an old recipe using Sicilian pistachios, oil, salt, and pepper, all pasteurized to ensure natural preservation.
The quality of the ingredients makes this Pistachio Pesto an unmatched product. A Ricchigia’s Pistachio Pesto brings the rich, aromatic flavor of Sicilian pistachios to your table. It’s perfect for enhancing pasta and other traditional Italian first courses. It also makes a delicious base for sophisticated appetizers or a flavorful spread to enjoy with fresh bread, adding versatility to your kitchen.
Why is sunflower oil used in this Pistachio Pesto?
Instead of olive oil, A Ricchigia uses sunflower oil for its pistachio pesto. The reason for this is that the strong aromas of olive oil would overpower the flavor of the pistachios. In contrast, the mild sunflower oil enhances the aroma of the slightly sweet pistachios.
After some time, the oil may separate and rise to the top of the jar. This occurs due to the absence of emulsifiers and additives. We recommend stirring the pesto well in the jar before consumption.
Who is A Ricchigia?
A Ricchigia is a Sicilian family business rooted in a love for its homeland and the traditional processing of pistachios. At the heart of its work is the famous pistachio cultivation in Bronte, on the slopes of Mount Etna, known for its aromatic flavor and vibrant green color. The name “A Ricchigia” means “richness” and comes from the place where the family’s pistachio grove is located — a reflection of the special treasures that the Sicilian land has to offer.
With great passion, traditional craftsmanship, and high-quality ingredients, the company creates delicious specialties made from pistachios, Sicilian almonds, and other nuts. A Ricchigia combines Sicily’s culinary traditions with modern ideas, placing great importance on quality and authentic flavor.
What began as a family business has grown into an expanding company that is enlarging its production facilities and continually investing in the training and development of its team. Today, A Ricchigia’s specialties are exported worldwide. At international trade fairs, the company showcases the diversity of Sicilian food culture, delighting people in many countries with traditional recipes and new flavor creations.
Bronte
The small town of Bronte, with a population of around 19,000, is world-famous for its pistachios. It is located 54 km northwest of Catania in the eastern part of the island of Sicily and on the western slopes of Mount Etna. Every second year, at the end of September, the local festival “Sagra del Pistacchio” takes place, highlighting the importance of pistachios for the town. The pistachio harvest occurs in September. To preserve the quality of the fruits, it is carried out only every two years.
The quality of pistachios from Bronte is unparalleled and is due to the soil and climate. The conditions are ideal for the plants, allowing pistachios to grow there with a flavor and intensity that is unique. They have an elongated shape, with a violet outer shell and a deep green kernel. They are also referred to as “green gold” and carry the protected designation Pistacchio DOP, provided they come exclusively from Bronte in the province of Catania.
