Why is sunflower oil used in this Pistachio and Summer Truffle Pesto?
Instead of olive oil, Gusto Etna uses sunflower oil for its Pistachio and Summer Truffle Pesto. The reason is that the strong aromas of olive oil would overpower those of the pistachios and truffle. The mild sunflower oil, on the other hand, enhances the flavor of the slightly sweet pistachios and the mushrooms.
After some time, the oil will naturally separate and rise to the top of the jar. This occurs due to the absence of emulsifiers and additives. We recommend simply stirring the pesto well in the jar before enjoying it.

The history of the company Gusto Etna from Bronte aligns with the life story of Gianluca Triscari, who realized at the age of 18 that he did not want to live his life according to conventions, but instead wanted to spark a revolution. He aimed to write the story of an active and entrepreneurial Sicily that enhances local products in order to make them known and appreciated in Italy and around the world.
Today, his company offers a wide range of pistachio products, from jams to pure pistachio paste. In addition, pistachio pesto and pistachio cream as well as spreads are produced, along with traditional pasta in many different shapes. Gusto Etna completes its assortment with pistachio pralines, pistachio panettone, croccanti, and cream liqueur.
Bronte
The small town of Bronte, with a population of around 19,000, is world-famous for its pistachios. It is located 54 km northwest of Catania in the eastern part of the island of Sicily and on the western slopes of Mount Etna. Every second year, at the end of September, the local festival “Sagra del Pistacchio” takes place, highlighting the importance of pistachios for the town. The pistachio harvest occurs in September. To preserve the quality of the fruits, it is carried out only every two years.
The quality of pistachios from Bronte is unparalleled and is due to the soil and climate. The conditions are ideal for the plants, allowing pistachios to grow there with a flavor and intensity that is unique. They have an elongated shape, with a violet outer shell and a deep green kernel. They are also referred to as “green gold” and carry the protected designation Pistacchio DOP, provided they come exclusively from Bronte in the province of Catania.
